Amy's Cakes Ltd - How it Started!

At the time, I had two young children who loved helping in the trailer. It was very much a family effort. We did have girls working in the trailer so I could bake more cakes, or spend some time with my husband and children.
We served classic cupcakes and cake pops to our famous hot chocolates topped with whipped cream and marshmallows. On busy weekends, we’d be non-stop serving! We did have quiet times though, when the weather was very bad, we would be very slow, which made the business as unpredictable as the weather!
We took the trailer to local events — Christmas markets, summer festivals, and even the big Cunard celebrations in New Brighton. Thousands of people came through those events, and we worked day and night to keep up — refilling the coffee machine, topping up supplies, keeping the generator going, and smiling through the madness!
We were so busy on the Three Queens weekend that even the big chains nearby were running out of supplies. A few of the bigger ones actually had to close one day because they ran out — while our little trailer kept on serving!
Running that trailer was far from easy. The long days, early mornings, and unpredictable weather tested every bit of energy I had. But it was also one of the most rewarding times of my life — seeing people enjoy what I’d baked, growing a reputation for quality, and building something real from scratch.
Eventually, as my children grew and life moved on, I decided to sell the van and focus more on developing the baking side of the business from home.
That decision led to the next chapter — Posh Puds, which I took over in 2018. Since then, I’ve expanded into handmade meringues, supplying restaurants across Merseyside and Cheshire, and continuing to do what I love most — creating delicious, homemade desserts that bring people joy.
When I think back to that little pastel-blue trailer by the sea, I can’t help but smile. It’s where it all began — with an idea, a few trays of cupcakes, and a lot of determination. Since 2020 I have seen many cupcake and coffee trailers come and go, and I know how hard it was to keep up all those years ago, but its never been a regret, just a great experience!

The van started out as a red-and-white ice cream trailer, but after a complete conversion and a fresh coat of pretty blue and pink paint, Amy’s Cupcake Trailer was born.
I still remember that first weekend like it was yesterday. I stayed up all night baking, filling the van with the freshly made cupcakes, tiffin, brownies and cake pops. The next morning, I opened the hatch — and we were greeted with huge queues! It didn’t stop all day. Word spread quickly, and soon we had regulars returning every weekend for their favourite cakes.
